Ingredients

Scale
  • 1 3/4 cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 2 eggs
  • 1 cup applesauce (unsweetened)
  • 1/2 cup pure maple syrup
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 large honeycrisp apple, core removed and grated

For the Chai Sugar Topping:

  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground nutmeg
  • pinch of ground black pepper

Instructions

  1. Preheat oven to 350° F. Coat a loaf pan with nonstick spray and line with parchment paper.
  2. Whisk flour, baking soda, salt and cinnamon in a medium mixing bowl.
  3. To a separate large mixing bowl, add eggs, maple syrup, applesauce, vanilla and oil and whisk well to combine. Fold in the grated apples.
  4. Add dry ingredients to wet and mix until just combined. Pour into loaf pan and top with as much of the chai sugar as it takes to fully coat the top.
  5. Bake for one hour, or until a paring knife inserted in the middle comes out clean. Leave in pan for at least 15 minutes and then carefully remove to a cooling rack. Let cool completely before slicing.
