This simple 3-ingredient mojito mocktail is simple, bubbly and refreshing. Perfect for hot summer days and not overly sweet.

Mint Simple Syrup

  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 3 sprigs mint

Mojito Mocktail

  • 1/2 lime, juiced
  • 2.5 Tbsp mint simple syrup
  • 6 oz club soda
  • garnishes: extra lime slices and mint sprigs

Instructions

  1. Make the simple syrup: Add sugar and water to a small saucepan over medium heat. Stir often until sugar is completely dissolved (about 3-4 minutes). Remove from heat and add mint sprigs. Let sit/cool for at least 30 minutes. You will not need all of this syrup.
  2. Make the mocktail: Fill a tall glass with ice. Add lime juice, mint simple syrup and club soda. Stir until well-combined. Garnish with additional limes and mint.
