  • 4 slices bacon, chopped
  • 1 pound ground chicken breast
  • 1.5 teaspoons salt, divided
  • 2 cloves garlic, minced
  • 1/2 teaspoon poultry seasoning
  • 34 sprigs fresh thyme, stems removed
  • 2 tablespoons olive oil
  • 1 large shallot, diced
  • 1 large carrot, diced
  • 2 stalks celery, diced
  • 8 cups vegetable broth
  • 1/2 bunch curly kale, chopped (stems removed)
  • 1, 14.5 oz can cannellini beans, drained/rinsed
  • 1/2 lemon, juiced
  • for serving: fresh grated parmesan cheese, pesto, crusty bread
