Blueberry Lemon Poppyseed Oat Bites

These no-bake oat bites studded with lemon, blueberries, poppyseed and a touch of almond extract really brighten up your afternoon snack. They’re more wholesome than packaged snacks and incredibly easy to make. A kid favorite!

Ingredients

Scale
  • 2 cups old fashioned roll oats
  • 1/4 cup pure maple syrup
  • 1/2 cup almond butter
  • 1/4 cup hemp hearts
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon almond extract
  • 1 lemon, zested and juiced
  • 1 tablespoon poppyseeds
  • 1/3 cup dried blueberries

Instructions

  1. Add all ingredients to a food processor except the blueberries and pulse until well combined. Stir in the blueberries.
  2. Use a cookie scoop to portion into 1.5 tablespoon balls and place on a parchment-lined plate. Refrigerate 15 minutes, then roll between your palms.
  3. Store in the refrigerator and eat within one week. You can also freeze for up to one month!
