These no-bake oat bites studded with lemon, blueberries, poppyseed and a touch of almond extract really brighten up your afternoon snack. They’re more wholesome than most packaged snacks and are incredibly easy to make. A kid favorite!

There is no shortage of oatmeal bites in my refrigerator at any given time! It’s one snack that we have on repeat because they’re fast and simple to make at the beginning of the week and there’s nothing funky in the ingredients list. Did I mention the flavor options are endless? This lemony blueberry twist is one of our newer favorites and a nice change from peanut butter.
This homemade and kid-friendly snack is vegan, gluten-free (if you use GF oats), dairy-free and peanut-free so it can meet needs for a large audience, which is another thing I love!
Here’s what you’ll need to make them:
Ingredients for No-Bake Oat Bites
- rolled oats (use certified gluten-free if needed)
- pure maple syrup
- almond butter (or Nuttzo!)
- hemp hearts
- cinnamon & salt
- almond extract, which gives these just the right hint of muffin/cookie flavor that I love
- lemon (zest and juice for peak brightness)
- poppyseeds (optional)
- dried blueberries which are typically sweetened (just FYI)
Tips for Success
- Many oatmeal ball recipes will call for mixing everything together in a big bowl by hand, but I find that the food processor really is the best method for getting everything finely chopped and incorporated at the same time (see the recipe card for the exact model I have and recommend). It speeds up the process and just makes things easier!
- For this recipe, I recommend leaving out the dried blueberries until the very end and folding/pressing those into the dough as best you can (they’ll fall out and that’s OK! you can just push them back in at the end).
- Lastly, chill the dough balls just after scooping and before rolling. This gives them a chance to firm up slightly, so they’ll roll easier and hold together better overall.
FAQs and Substitutions
Cashew butter is another nut butter to try here that would work great.
Any dried fruit will work such as raisins, dried cherries or dried cranberries.
It depends on how powerful it is but most blenders probably wouldn’t be able to handle the weight of this “dough”. You can mix by hand if you don’t have a food processor, it will just take longer to really incorporate all of the ingredients.
As evidenced by the photo above, clearly my kids love these! They work great for early morning wake-ups as a little pre-breakfast snack, or any time throughout the day when you need something quick that doesn’t require any prepping. I appreciate that these are made with wholesome ingredients and also taste great!

Ingredients
- 2 cups old fashioned roll oats
- 1/4 cup pure maple syrup
- 1/2 cup almond butter
- 1/4 cup hemp hearts
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon almond extract
- 1 lemon, zested and juiced
- 1 tablespoon poppyseeds
- 1/3 cup dried blueberries
Instructions
- Add all ingredients to a food processor except the blueberries and pulse until well combined. Stir in the blueberries.
- Use a cookie scoop to portion into 1.5 tablespoon balls and place on a parchment-lined plate. Refrigerate 15 minutes, then roll between your palms.
- Store in the refrigerator and eat within one week. You can also freeze for up to one month!
