Fig Toast with Caramelized Onions, Bleu Cheese & Arugula

This fig toast is delicious at any time of day and feels fancy while being super easy to assemble. Make the caramelized onions ahead of time so you can throw it together whenever the craving strikes!

Ingredients

Scale
  • 12 Tablespoons olive oil
  • 1 medium red onion, sliced
  • 1 thick slice sourdough bread (I used a rosemary sourdough!)
  • 1 Tablespoon fig spread
  • 2 Tablespoons bleu cheese crumbles
  • handful of arugula 

Instructions

  1. Caramelize the onions: heat olive oil in a large skillet over medium low. Add onions and stir occasionally until nice and brown (about 20-30 minutes). 
  2. Toast bread. Add fig spread in an even layer, then top with a good layer of caramelized onions, bleu cheese crumbles and arugula. Serve immediately.

  • I recommend caramelizing the onions ahead of time so you’re ready to assemble this at any time. You won’t need the entire onion for this recipe, but you’ll be so happy to have extra on hand. Use them on sandwiches, burgers, egg scrambles and grain bowls.
  • To keep this dairy free, feel free to omit the cheese.
