I love a good fancy toast.
This one is so balanced and satisfying! Salty meets sweet meets bitter meet peppery. Layer it all on a piece of perfectly toasted fresh and fluffy sourdough and we have a winner.
When you have great leftovers, this is such a flavorful and interesting way to use them. The combination of fig jam, caramelized onions, bleu cheese and arugula is impossible to beat.
Here’s what you need to make this fig toast:
Ingredients
- sourdough bread. I used a rosemary sourdough here. I usually buy it from the bakery section of my grocery store because it tastes way fresher than anything in the bread aisle.
- fig jam. find this near the cheeses in most grocery stores.
- caramelized onions. make a big batch and use them in everything.
- bleu cheese crumbles. I think goat or feta cheese would also be excellent here but I have a soft spot in my heart for bleu. so so good.
- arugula. you could sub a different leafy green, but I think the peppery arugula is perfect here.
I’m usually all for substitutions based on what you like, but I highly suggest making this one as written. The flavor profile feels like it was just meant to be.
How to Make Caramelized Onions
Pro tip: make a batch of caramelized onions over the weekend and use them on EVERYTHING. Is there another ingredient out there that is this perfect? Just look at that brown color.

Ingredients
- 1–2 Tablespoons olive oil
- 1 medium red onion, sliced
- 1 thick slice sourdough bread (I used a rosemary sourdough!)
- 1 Tablespoon fig spread
- 2 Tablespoons bleu cheese crumbles
- handful of arugula
Instructions
- Caramelize the onions: heat olive oil in a large skillet over medium low. Add onions and stir occasionally until nice and brown (about 20-30 minutes).
- Toast bread. Add fig spread in an even layer, then top with a good layer of caramelized onions, bleu cheese crumbles and arugula. Serve immediately.

This resembles my favorite flatbread at a nearby wine bar that recently closed. It’s perfect for a light snack and pairs perfectly with a nice glass of red wine if you’re into that sort of thing. (And I’m definitely into that sort of thing!)
