The beauty of this is you can use any variety of berries, stone fruits (like peaches or plums), or of course apples or pears in the fall. The same formula applies:
- Fruit: tossed with sugar, corn starch and citrus
- Crumble: a mixture of oats, flour, brown sugar and butter
It’s wholesome enough to enjoy at breakfast (okay, maybe a weekend breakfast lol) and pretty enough to serve it to guests.

- white whole wheat flour
- brown sugar

Strawberries and Sweetness
I’ve been loving strawberries even more than usual this year, and I find them to be one of the more reliable fruits from the grocery store throughout the summer. Before tossing them in sugar, you’ll want to halve or even quarter to make them as uniform in size as possible.
The amount of sugar you use here is definitely not hard and fast. Use more if your fruit is less ripe/flavorful; use less if you are working with peak juicy strawberries. I found two tablespoons to be just right.
Corn starch gives you that beautiful glossiness and thickens up the juices enough to hold everything together. Lemon juice adds a lovely brightness.
FAQs and Substitutions
Yes you can! I have made many a fruit crisp with just the oats. I do find that the crumble topping is more crumbly and less cohesive so I prefer the flour version better.
Sub coconut oil for the butter.
I love a good peach crisp! Cherries would also be fantastic here. Adjust the sugar as needed based on sweetness.

Ingredients
- 2 pounds fresh strawberries, halved
- 2 tablespoons sugar
- 1 tablespoon corn starch
- 1/2 teaspoon vanilla extract
- 1 lemon, juiced
- 6 tablespoons unsalted butter, cubed
- 1.5 cups rolled oats
- 1/4 cup + 2 tablespoons white whole wheat flour
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375° F. Grease a 12″ cast iron skillet (or other oven safe skillet/bakeware) with butter and set aside.
- To a large bowl, add strawberries, sugar, corn starch, vanilla and lemon juice. Stir until the fruit is well coated and glossy. Pour into the skillet.
- Wipe out the bowl and add in oats, flour, brown sugar, cinnamon and salt. Use clean hands to cut the butter into the dry ingredients until it clumps together and is dark in color. Scatter the oat mixture evenly on top the fruit. Place in the oven for 30 minutes or until the fruit is bubbly and the top is browned.
- Best served warm with vanilla ice cream. Cover and store at room temperature for up to a day, or in the refrigerator for up to 2 days.
